Giada De Laurentiis™ for Target® 10-pc. Professional Series Tri-Ply Clad Cookware Set Review

I shopped long and hard before I bought this cookware. I went into expensive kitchen stores in upscale malls. I talked to pro chefs. I made a very precise list of what I did and did not want in a set of cookware. I drove my family crazy talking about the virtues of Tri Clad Stainless Steel vs. Anodized Aluminum. And I ended up ordering this set to go in a new kitchen in a new house. I have used it for a month now, and I LOVE IT. You cannot do better than this, unless (perhaps) you are willing to spend close to 00.00. This cookware works as well as anything put out by All Clad or Mauviel and it costs half as much. Of course you will want a nonstick skillet for doing eggs; there's a very good one available from KitchenAid for under .00. But the skillets included here will be your kitchen workhorses. Yes, it would be nice to have a large stockpot and a saute pan and maybe a saucier, but you can get those separately for reasonable amounts. If you are contemplating a new set of cookware GET THIS ONE -- unless you want to treat it carelessly. Then get a nice ceramic nonstick set and replace it every few years when it gets too scratched up. But treat this set properly and it will come out looking like new every time you wash it. And you will have the control and finesse with your food that a pro chef would demand. Yes, ladies and gentlemen I HUGGED the largest pot after cooking, dining on, and cleaning up after a fabulous Risotto tonight. And my wife said "you've GOT to write a review." So I have. NOW BUY IT!

Gorgonzola and Porcini Mushroom Risotto
4 cups low–sodium chicken stock
1 1/2 ounces dried porcini mushrooms
3 tablespoons butter, divided
1 medium onion, diced
1 1/2 cups Arborio rice
1/2 cup dry white wine
1/2 cup grated Parmesan cheese
3/4 cup (3 ounces) Gorgonzola, crumbled
1/4 cup chopped fresh chives
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
In 3–quart saucepan, bring stock to a boil over medium–high heat. Add mushrooms. Remove pan from heat and set aside 30 minutes until mushrooms are tender. Using a slotted spoon, remove mushrooms and set aside.
Reheat stock to a simmer and keep warm over low heat.
In Dutch oven, melt 2 tablespoons butter over medium–high heat. Add onion and mushrooms; cook until onions are tender, about 5 minutes. Add rice and stir to coat with butter. Add wine and simmer until wine has almost evaporated, about 3 minutes. Add 1/2 cup of warm stock and stir until almost completely absorbed, about 2 minutes. Continue with remaining stock, adding 1/2 cup at a time, and allowing each addition to be absorbed, until rice is tender to the bite and mixture is creamy, about 20 to 25 minutes. Remove pan from heat. Stir in remaining ingredients.
Makes 4 to 6 servings
