Essential Tips For The Perfect BBQ Cookout

It's early August and the summer holidays are approaching. My kids are already packing the RV, we will not even go for another two weeks, but I can not dampen their spirit.

I have additional 11 days (and more) at work, I can not afford to let me go, but only how I see the excitement in the eyes of children "I know that I be the same if I getting the portable grill from the garage.

I love the camp in Europe, not only because of the freedom to go where I want tobut also because of the variety of interesting people who I meet on the road. Walk around the campsite at any time after 1.00pm and you will start to smoke, to see how the families gather for a cookout lunch. Assuming I get my introduction prefixed with a polite "Bon Appetite" or "Buen Provecho" I can usually see a quick curious to know what to cook and how they do it, and the best part is, of course, if the complement and is moved back and they come to see what I cook.

There arehave been many a time as this exchange of friendship begin to become more competitive and a small part of what cooking is brought to my place for sampling. Of course I have to say! Neither party can talk to the other jargon, so that the international language of Europe is once again food - and grilled food to boot.

What better way to get some free smoker recipe as walk around the campsite? It is also amazing to see how easy some of the flavorare.

In Italy, for example, meat (beef or lamb in general) well seasoned with salt and pepper on the grill until pink and then traditional with a balsamic vinaigrette and lemon served up at the table.

The meat should be seasoned on one side only and will not try it often varies. You want the meat to a good temperature for cooking the natural sugars to mobilize, and if you want it too often not easy to get the meat up to temperature. · 2 cloves crushed garlic

· 1 tablespoon olive oil

· 1 teaspoon vinegar

· ½ teaspoon salt

Just stir together all ingredients and put in the fridgeat least one hour so the flavors come together.

Simple flavors, fresh meat and that's all there is to it. The European camping tour is really a fantastic barbecue smoker recipes produced and I hope that this year will be no exception.

The Art of the Marinade

It is a sad fact that it is now become almost essential to marinade most cuts of meat, unless you want it is not pot.

I'm going to explain why this is the case a bit later, but for the time when we just examine why we use marinades at all.

There are basically two reasons. One is to add the flavor and the other is soft. In general, we will try to do both.

It is worth bearing in mind that marinating is a cooking process, though rare warmthbe applied. The significance of this finding is that, like any other cooking procedure, you can overdo it.

It's not just about the implementation of the meat or fish in a sauce and leaving it there until you are ready to use them. Many of the fruit juices that we in marinades, such as lemon and pineapple contain enzymes, proteins. In essence, what they do, it is to digest.

Leaving meat in them too long, would result in an unpalatable mush. If you try this yourself,leaving a piece of pork with fresh pineapple juice overnight and then see what happens if you put it to boil.

You will probably not like the result.

Why is meat tough?

It is a tragedy that while we are killing our animals at an earlier age in order to meet the demand for fresh meat to be, the end product still tends to be hard.

There are good reasons for it, and it makes sense to provide a sufficient knowledge of them only in order to avoid potential disasters.

It is not, as someChefs, you'd think only a matter of finding a butcher who will take the trouble to discuss your needs with you, if ever such a person still exists outside the fanciful cookbooks.

Our meat is tough because it started to point out that way. And here's why (if you're squeamish, skip this section):

When an animal is killed its muscles (protein) are released into spasm caused by the injection of the famous fight or flight chemicals to the brain.

Under normalConditions, ie in the natural world to say, this would rigor mortis setting, followed by a gradual easing of the proteins back to their normal state.

However, because of the speed with which the slaughter and preparation of carcasses is carried out, this important and natural step is rarely, if ever completed. The animal is killed, cooled and frozen in a continuous process.

If you want to heat it up to use it as an accompanying sauce, by all means do, but sure it comes to a boil and boil it for at least 10 minutes.

Alternatively, heat it in the microwave, will achieve the same in less time.

I'm just a guy who likes to cook. The Berndes teflon sauce pans that I've been using for years were starting to deteriorate, and I knew I wanted to replace them with a set of stainless steel clad cookware. As much as my ego wanted All Clad or Demeyere, I just couldn't justify the cost. After a lot of research and store trips, I decided on the Calphalon Tri-Ply set. Deciding to make one last attempt to kill any buyer's remorse, I made one more trip to Bed Bath and Beyond just to be sure. That's when I spotted the Emerilware Pro-Clad set (this is the fully-clad line, not the original line with the heavy disk welded to the bottom). I should say I'm not really a fan of Emeril -- he's just another TV personality to me. I rarely watch his shows, and I've never eaten in his restaurants. If anything, I'm the kind of person who would avoid celebrity endorsed products.

Enough with the caveats. I wasn't crazy about the handles on the Calphalon set. Too skinny and short for my hands. When I grabbed the Emerilware sauce pan, it was instantly very comfortable in my hand. The handle is much beefier than pretty much any other SS cookware I picked up. Performance-wise, the handles stay cool on the stovetop (I have a glasstop). Even the loop handles on the stockpot were cool enough to pick up and drain a pot of spaghetti. Love the handles. The pieces have a slight heft to them without being unwieldy. I have a couple of old monster fry pans, and these are very easy to manage in comparison. Good weight and balance. Also, liquids pour nicely off the rolled lip.

I've had no problem adjusting to SS after using teflon for a lot of years. I use olive oil or canola oil, and have had no problem with food sticking or burning. I love the saute pan for searing steaks, chicken, and pork chops, then throwing it into the hot oven to finish. Back on the stovetop (using a pot holder, duh), a little bit of chicken broth or wine deglazes the pan and makes a quick an easy sauce. I find that I use all of the pieces in the set on a regular basis. The steamer is useful as we prefer to steam our veggies. If you follow the instructions and keep an eye on the heat, these things clean up with absolutely no problem. Any residual discoloration or stubborn bits come right off with Barkeepers Friend.

I deducted one star for the following small gripes: I would have preferred SS lids instead of glass, even though I haven't run into any drawbacks with the glass. Next, the Pro-Clad line is somewhat limited compared to other brands. I picked up the largest (3 qt) saucepan to round out the set -- I would have preferred a 4 qt with an extra loop handle, but it' not offered. I'm hoping the manufacturer adds other choices to the line over time. It would be nice to have a matching saucier or wok, for instance. Lastly, I've noticed that the frying pan is warped very slightly, maybe 1/16", so that it rocks a little bit on the glasstop. I didn't notice if it came out of the box this way, or warped slightly from the heat of the stove. It doesn't seem to affect the performance anyway. All of the other pieces are perfectly flat on the bottom. I inspected all of the pieces for burrs, and found them all to be perfectly smooth.

In summary, my wife and I are really pleased with our purchase of the Emerilware Pro-Clad set. It works great and looks great. We expect them to give us many years of great food.

What Makes a Stainless Steel Cookware Set Your Best Choice

The Calphalon Tri-Ply Stainless 13 Piece set is hard to beat with all factors considered. Price, performance, aesthetics, ease of clean-up etc. etc. Never having been fans of stainless cookware in the past, we have been absolutely taken, so far, with this set. We were both brought up by parents who suffered through the hard times of the Great Depression and WWII. Accordingly they developed a high sense of frugality which was in-turn instilled in us. "Why buy a new pan when you can have this one I no longer use?" So we ended up with an ever evolving set of hand-me-downs that one might see in a yard sale and our cookware cupboard looked like something Andy Warhol might like to paint/photograph. The one absolute requirement,from both mothers, was that for certain cooking, properly seasoned/maintained cast iron skillets and dutch-ovens had no peers. A principle to which we both still subscribe and have self-proven. The "coated" aluminum pans eventually lose their non-stick coat, pure aluminum is a reactive metal and may pose health risks, plain stainless steel can be unforgiving depending on thickness etc. So, after 44 years together, through "our" tough times and "our" good times, we made a well researched decision finally bought a complete set of cookware, And, so far, we are delighted that it has performed as proclaimed. The full tri-ply sandwich does the trick. Even cooking at all points on the geometry. We have noted that the handles on the skillets/fry/omelet/saute pans do remain cool, the handles on the pots get a bit warmer, and the handles on the covers get warmer still. But, then, mitts should be used anyway. (Ever pick up a hot, camp-fire coffee pot before?)
We are happy and highly recommend Calphalon and in particular this set.
